    心得交流站 : 这道菜不放麻油,因麻油香味会盖过莲子清香味。

    Step 1

    冬瓜拉油片刻,盛起备用。Blanch winter melon with hot oil,drain.

    Step 2

    将材料B的清水煮沸,放入泡参慢火煮20分钟成泡参汤,加入冬瓜和调味料A焖至冬瓜软,上碟,汤汁留用。Bring water from ingredients B to boil,add in ginseng and simmer for 20 minutes,add in winter melon and seasoning A,braise until soften,dish out. Keep the gravy for later use.

    Step 3

    将材料C飞水备用。Blanch all ingredients C in boiling water,set aside.

    Step 4

    锅中热油,爆香姜茸,加入材料C炒片刻,倒入冬瓜汤汁和调味料B煮沸,勾芡后盛起,放入冬瓜中间即成。Heat oil in wok,saute chopped ginger until fragrant,add in ingredients C and stir-fry briefly,pour in the gravy from winter melon and seasoning B,simmer briefly,thicken with starch. Dish out and pour into the center of braised winter melon.
